Fried Green T'maters |

| Beat an egg & 1 cup
buttermilk t'gether. Slice dem green t'maters & put 'em in a bowl &
pour this bettermilk/egg wash over them. Let 'em sit in this & git
happy while you gittin' the skillet ready. Mix some flour & white corn meal together 1:1 ratio - then season it. Salt & pepper...nuttin' fancy. Cast iron skillet. Put some bacon grease in the skillet. Not too much...we ain't gonna deep-fry. Get it hot.....NOT TOO HOT.....just hot enough so dem maters sizzle when you drop 'em in the pan. This is important. Take a mater slice outta dat wash & bread it in dat breading. Shake off excess & put it in the skillet. IS IT SIZZLING? HUHHHHHHH?? OK, if it is...then bread another one & put it in there. Just do 6-5 at a time...dependin' on the size of yer skillet...AND...the size of yer maters. Don't overcrowd the skillet. Horrible ugly thangs happen when you do dat! When they nice & brown on one side...flip it over GENTLY..<g>..and brown the other side. Just flip 'em once! Remove 'em from the skillet & put 'em on a lil' rack to drain. Sprinkle 'em wif a lil' salt & pepper...to taste...when they first come out dat skillet. I like 3-4 slices of 'em on a plain ol' white bread sandwich...nuttin' else on 'em 'cept mebbe a lil' Tabasco...sometimes ah put a lil' dat plain ol' yeller mustard on 'em...if ah'm in dat kinda mood... I fried up some just a couple nights ago. I was in a mustard mood. Washed 'em down wif a couple cold NA beers. Country boys can survive..... Chez |
