Mashed Patatoes With Fresh Garlic Scapes

7-8 med russet potatoes, peeled and cut into chunks
1/2 stick butter
2 Tbsp olive oil
1/2 cup finely chopped scapes
1/4 cup milk 
1 Tbsp sour cream
White pepper
Kosher salt 

 
Directions:
Boil potatoes in salted water until very tender. Drain and return to pot. Over medium high heat, melt butter with olive oil in a small skillet. Add scapes and saute' about 4-5 minutes. Add to potatoes and mash. Gradually add milk and sour cream while mashing. Season with salt and pepper. Fantastic with Cajun Tomato Gravy!
