Pickled Tomato Salad |

| 3 big homegrown tomatoes - cut in
eighths 1 green pepper - chopped 1 red onion - cut into rings 2 Tbsp minced fresh basil |
Vinaigrette: 1/2 c Apple juice concentrate 1/2 c Cider vinegar 1/4 tsp Salt 1 Tbsp Olive oil 1 tsp Sugar 1 Tbsp Pickling spices - tied in a cheesecloth bag |
| Directions: Bring dressing ingredients to a boil. Reduce heat; simmer 5 minutes. Let cool to room temperature; mix with combined salad ingredients. Chill, covered, at least 1 hour before serving. |
