| Chez John's "Black & Bleu" Steak Butter |

| 1 stick unsalted butter 4-5 ounces crumbled Roquefort bleu cheese 3-4 cloves roasted garlic 1 Tbsp L&P Worchestershire Sauce 2 Tbsp good red wine 1 tsp fresh cracked black pepper 1 tsp fresh snipped chives Pinch of Kosher salt |

| Directions: Blend all ingredients well with electric mixer. Use pastry bag & pipe mixture out into approx. 1 Tbsp portions ( stars, rosettes, etc ) then freeze. Once frozen, they can be kept in a lidded container or freezer bag. Place one atop each steak when you plate them...hot off the grill |
